What’s the restaurant in a nutshell?

Restaurant Iris, a one-of-a-kind gastronomic haven, resides in the heart of Norway’s Hardanger fiord. Opened in spring 2023, this dining spectacle is housed within the architectural gem, Salmon Eye – an ellipsoid orb that appears to hover over the fjord, its design a tribute to the unique shape of a fisheye. The conceptual design is the brainchild of Kvorning Design in collaboration with Brigh Norway (now Creative Technologies) and creates an immersive and dramatic atmosphere. At the centre of it all, acclaimed Danish chef Anika Madsen curates a sustainable and locally sourced culinary narrative that is as captivating as the restaurant’s setting.

What are the signature dishes?

At Iris, Madsen tells an intriguing tale through her food – a tale of the challenges our global food system faces and the innovation that may bridge the gap. She showcases the best of local and sustainable produce, presenting it in a way that highlights her commitment to sustainability. Signature dishes such as the red sea urchin, sourced directly from the surrounding waters and regional game meat take centre stage. Madsen also spotlights local seaweed varieties and other lesser-known but delicious marine ingredients, turning each dish into a tribute to the bounty of the Hardanger fiord.

Drinks, anyone?

The drinks menu at Iris is as meticulously crafted as the food menu. Guests can indulge in a selection of wine pairings, carefully chosen to complement the complex flavours of each dish. Additionally, Iris offers an alcohol-free beverage pairing that introduces diners to a variety of intriguing non-alcoholic alternatives. However, due to the restaurant’s remote location and unique logistics, Iris serves only a set menu and may not accommodate all dietary restrictions.
