Vyn

What’s the restaurant in a nutshell?

In the tranquil setting of Österlen, Skåne, Vyn emerges as the latest culinary masterpiece by Daniel Berlin, acclaimed for his former Michelin-starred venture, Daniel Berlin Krog. This Scandinavian gem, a fusion of gastronomy and design, features a custom-designed open kitchen by Nordiska Kök, elevating the art of cooking into a visual spectacle. Working alongside Lisa Mannheimer from Fojab, Berlin has infused the space with a sense of harmony, reflective of Österlen’s peaceful landscape. For diners seeking a more spontaneous experience, Vyn also offers a casual food and wine bar, providing a taste of Berlin’s exceptional culinary approach in a relaxed, accessible environment.

What are the signature dishes?

Berlin’s culinary narrative is woven intricately with the local terroir. The restaurant, supported by a bespoke kitchen designed by Nordiska Kök, provides a stage where Berlin showcases his deep connection with locally sourced ingredients. The culinary journey at Vyn is a spectacle of local flavours and ingenious craftsmanship, starting with a snacks serving that resembles a treasure box. The ensemble includes warmed king crab, Linderöds pork cheek and local saffron, alongside the revered Kalix löjrom – bleak roe paired with caramelized celeriac and verbena. Highlights include a delicate balance of hot and cold scallops in an apple and sugar kelp sauce, and langoustine cooked in brown butter, accompanied by quince paste, pumpkin and claw meat. Another standout is the salted egg white, yoghurt sorbet and rosemary caramel – a sweet treat harking back to Berlin’s earlier creations. At Vyn, Berlin’s tells an intriguing story of the land, its produce and the people who cultivate it.
