Situated in the iconic Fjordenhus building in Vejle, Lyst’s conception is the result of a symbiotic collaboration with Studio Other Spaces, headed by artist Olafur Eliasson and architect Sebastian Behmann. Every corner of this enchanting establishment, poised gracefully below sea level, oozes with the distinctive influence of its creators. Circular themes accent the interior, symbolising Lyst’s philosophy of sourcing ingredients from within a 100-mile radius. This unique dining experience is steered by English-born Head Chef, Daniel McBurnie, a culinary master who’s served in prestigious kitchens from d’Angleterre’s Marchal to AOC, and Rick Stein’s Padstow haven in England.

Expertly chosen by top-tier sommeliers Rasmus Marquart, a two-time Nordic sommelier champion, and Nina Højgaard Jensen, the world sommelier championships’ silver medalist, the wine list is truly second to none. Their team stands ready to guide guests through an invigorating exploration of taste and aroma, whether you’re enjoying a single glass or sharing a bottle.
