Maaemo
Oslo’s most influential restaurant still sets the tone for the city’s serious dining scene. At Maaemo, Danish chef Esben Holmboe Bang builds his three Michelin-starred menu around Norway’s raw materials, using organic and wild ingredients from across the country. Seafood, herbs, berries, dairy and grains are transformed through preservation, fermentation and fire. The name is often translated as Mother Earth, but the room is far from rustic. Radius Design created a dramatic, high-ceilinged space by the fjord, all shadow, timber and control. Book it for the full Norwegian tasting-menu experience, where landscape is translated with precision rather than sentimentality.
