In Skåne’s coastal city in southern Sweden, the best places are spread through the neighbourhoods, so a proper bun, sourdough loaf, croissant or pastry is rarely far away. This guide picks the essential stops – and what to order when you get there.

Deg Bageri

Malmö, Sweden

In Slottsstaden, a residential neighbourhood just west of central Malmö, Deg Bageri is built around a few ideas executed obsessively well. The croissant swirl has become its calling card: tightly laminated and reworked in flavour every two weeks. Early versions set the tone, first rosehip and mascarpone, then tiramisu. Behind the counter are Elin Lundahl and Cassandra Persson, both competition-trained. Their CVs include Mat & Choklad in Malmö, Juno the Bakery in Copenhagen, junior and senior national baking teams and international medals.

Möllan gets a dose of French and Italian bakery culture at Farina, opened by Jake Haynes and Oscar Villata in spring 2020. The small neighbourhood bakery moves between flaky pain au chocolat, brioche and sourdough loaves, with savoury bakes and light lunch options broadening the counter. Maritozzi are a signature: soft Italian brioche split and generously filled with mascarpone cream, sometimes given seasonal flavours. Villata also runs nearby Kaffebaren på Möllan, reinforcing Farina’s connection to the neighbourhood. The mood is casual and continental, particularly when the pavement tables fill, but the baking is precise enough to make it a destination.

The Basque connection comes through most clearly in the caramel Basque cheesecake, but this is more than a pastry stop: croque-style sandwiches, eggs and a compact bistrot menu make it useful from breakfast through late afternoon without feeling formal.

Didrik Persson and Martin Westin founded it in 2017, later moving to an entirely plant-based range while continuing to bake sourdough in a stone oven. The bakers work during the day rather than overnight, which means warm loaves appear in the afternoon. Pastries are where the personality shows most clearly: laminated doughs, buns, cakes and a rotating Friday doughnut prove that plant-based baking need not play safe. Local, seasonal ingredients and waste reduction shape the operation behind the counter too.
