What’s the restaurant in a nutshell?

Ett Hem, celebrated as one of the world’s most unique hotel experiences, has opened its doors to a broader audience through its sublime restaurant. Seating just 30 patrons, with a coveted quartet at the kitchen island, this space is a masterclass in intimate dining. As we took our places at this exclusive island, we were not merely diners but front-row viewers of Ett Hem’s culinary theatre. Under the adept stewardship of head chef Leo Frodell and head sommelier Niklas Ödman, the cuisine speaks of bold simplicity, a testament to the treasures of local, seasonal produce. Interior designer Ilse Crawford’s design complements this ethos, creating an atmosphere akin to dining in the kitchen of a culinary-passionate relative, where each dish is a narrative of flavours and each interaction, a personal touch. Ett Hem, in essence, redefines the dining experience, transforming it into an interactive spectacle of gastronomic finesse.

What are the signature dishes?

In Ett Hem’s open kitchen, chef Leo Frodell and his team orchestrate a culinary ballet, plating dishes with finesse amidst an array of fresh ingredients. The scene is captivating: bowls brimming with vibrant produce, charcuterie hanging from a birch tree log suspended over the island. It’s here that we savoured one of the standout dishes – a perfectly grilled pike perch, aged a week, paired with yellow beets, pickled elderflower and house-made ’nduja and pancetta, all harmonized with rich hollandaise sauce. This is not fine dining in the traditional sense, but an elevated culinary experience where each dish, from the inventive white kimchi and herring prepared in the style of boquerones to the ultra-thin lomo slices from Grönby Gård and grilled Venus clams, is a testament to Frodell’s ability to blend rustic charm with gastronomic sophistication.

Niklas Ödman, Ett Hem’s head sommelier, orchestrates a wine list that’s as individualistic as it is extensive. With over 4,000 wines, Ödman’s eclectic selection reflects his unique taste, blending traditional classics with natural wines, and focusing on regions like France, Spain and Portugal. His preference for organic and innovative wineries gives the list a distinctive edge. Our meal was enhanced by Huré Frères NV Champagne Brut Reserve L’Invitation champagne, Vignerons Les Matheny’s Trousseau 2019, the rich Niepoort Redoma Douro Branco 2019 and Sauternes by Château Liot. The wine list, carefully curated by Ödman, is a testament to Ett Hem’s philosophy of offering a unique, yet intimately welcoming dining and drinking experience.

What’s the neighbourhood like?

Östermalm in Stockholm, Sweden, is often perceived as the city’s most upscale yet subdued district. But beneath its refined exterior lies a dynamic scene. The district surprises with an array of chic bars, top-tier restaurants and boutique shops. Key attractions such as the renowned Östermalm Saluhall food hall, the impressive Royal Dramatic Theatre, the Bergius botanic garden and the expansive Humlegården park show that Östermalm successfully merges Stockholm’s historic charm with contemporary appeal.
