An insider’s guide to the Nordics with Adam Dahlberg

We first crossed paths with Adam Dahlberg and Albin Wessman in the early 2010s, when they started loosening the starched collar of Stockholm’s fine dining scene. Their early pop-ups felt like an uprising – flavour-first, generous and radical – and eventually evolved into Adam/Albin, now a Michelin-starred fixture and one of the capital’s most consistently excellent tables.

In 2019, they launched Misshumasshu, a playful Japanese-inspired bar and eatery that blurred the lines between ramen, robata and raw fish. Fast forward to 2025 and the concept has been reborn in Birger Jarlspassagen – this time louder, sharper and bolder, with 800 square metres of Tokyo-meets-New-York energy. Then there’s Solen, their 2023 opening in a converted slaughterhouse in Slakthusområdet. The menu hops from Oaxaca to Naples to Tel Aviv, but the tone is all theirs – sun-drenched, deeply satisfying and as hard to define as it is to forget.

In this interview, Dahlberg shares his favourite Nordic favourites – not surprisingly, many of them revolve around a good meal.

… Bar Agrikultur, located in the Södermalm-district of Stockholm. The restaurant is a diminutive ’hole in the wall‘ but serves really good food. And the staff is lovely. Everything on the menu is delicious, but I never miss their pickled dills with smetana and honey.

For a fun night out, I head to …

… the meatpacking area of Stockholm with its stellar choices of clubs and concert venues. I kick off the evening with dinner and drinks at our own Solen restaurant, before heading to a concert. I highly recommend trying the cantaloupe margarita – or duckarita as we call it, since it is served in a carafe shaped like a duck. A pitcher goes down quickly and is a perfect way to set the vibe for the evening.
