What’s the restaurant in a nutshell?

Studio has finally opened its doors in its new location, after moving from The Standard on the Copenhagen harbour. When you step inside, you’ll be greeted by a stunning piece of art created by artist Frederik Lassen Hesseldahl – a dynamic wave that sweeps over a large mirror on the wall, creating a sense of life in the room. The interior design, done by Anders Busk Faarborg, Design Director at ATM Design Studio, is a beautiful blend of the old and new, using many of the same references, such as the delicate tiles and furniture found at the previous location in the city centre. Studio’s eclectic menu features a harmonious blend of traditional Nordic flavours and aromatic Asian influences.

What are the signature dishes?

Studio offers a 13-course set menu that features a harmonious blend of traditional Nordic flavours and aromatic Asian influences. The kitchen is led by the 31-year-old chef Christoffer Sørensen, who in 2021 received the Michelin guide’s “Young Chef” award. The ambition is to be among the best, and the menu is constantly evolving. However, one dish that you must try is the grilled duck breast, a symphony of flavours, featuring succulent duck breast, grilled to perfection, paired with smoked and rehydrated beets, a cognac and Szechuan pepper sauce and a side of confit duck gizzards and grilled duck hearts. The dish is a perfect balance of sweetness and savoury, and the cognac and Szechuan pepper add a depth of flavour that is truly unforgettable.

Drinks, anyone?

The wine pairing menu at Studio offers a diverse selection of wines from various regions around the world. The less pricey option includes a mix of red, white and sweet wines, with options for dry, off-dry and sweet Rieslings from Germany, a white wine from Loire in France, and a dessert wine from Hungary. The upgraded option features more high-end wines, including a mix of white and red wines, with options for Riesling, Pinot Noir and a Burgundy. These wines are characterized by their complexity, minerality and aged character. The wines are carefully selected to complement the flavours of the menu and offer a range of taste and aroma experiences, the menu also includes an alcohol-free drinks pairing option.

What’s the neighbourhood like?

Vesterbro is the beating heart of Copenhagen, where the city’s gritty past meets its trendy present. Once known for its red-light district and meatpacking district, Vesterbro has undergone a major transformation in recent years. Now, it’s a vibrant and eclectic neighbourhood, filled with trendy cafes, bars, and restaurants, trendy boutiques and colourful street art. Carlsberg Byen, the former brewery of the Carlsberg beer brand, is a must-see in the area. It’s a unique blend of old and new, where 19th-century industrial architecture meets modern design. The area is perfect for those looking for a more alternative and bohemian experience, with a good mix of local and international crowds.
