15 bakeries in Sweden that are destinations in their own right

As bread and pastries become increasingly global, Sweden’s most interesting bakeries are looking closer to home. Heritage grains, local mills and fiercely individual bakers are giving baking a renewed sense of place. From converted farm buildings to small-town shopfronts, these destination bakeries offer something increasingly rare: a taste of somewhere specific.

Loshults Handelsbod

Loshult, Sweden

A Friday bakery rather than an everyday café, Loshults Handelsbod gives visitors a reason to plan their route through northern Skåne. Salli Partanen and Raphael Bartke run the village shop, where slow-fermented sourdough bread and pastries sit alongside preserves, vegetables and practical handmade goods. Baking only one day a week is a deliberate choice: more time goes into the bread, while customers can preorder their favourites for collection. Park by Loshult church and walk the final stretch to the shop. This is destination baking on its own terms.

Dan Bakstudio

Varberg, Sweden

Dan Bakstudio is what happens when a sourdough obsessive finally gets the public workshop his following has been watching him build towards. Daniel Larsson went from self-taught home baker to bread teacher, course host and dough evangelist before opening this bakery-café in the town of Varberg on Sweden’s west coast. Norm Architects gives the obsession a striking frame: Douglas fir shelving, Varberg granite, linen shades, soft plaster and production in view. Go early for country-style sourdough, buns, croissants and the almond-cream croissant if it is on.

Rute Stenugnsbageri

Lärbro, Sweden

A former blacksmith’s workshop on northern Gotland houses one of Sweden’s most distinctive summer bakeries. At Rute Stenugnsbageri, Finnish master builder Heikki Hyytiäinen constructed an 18-tonne wood-fired oven in 2006, giving the bread its particular crust and character. Order a sourdough loaf or a cardamom bun, then settle into the garden or orangery; evenings bring stone-oven pizzas. The bakery is connected to the Fabrique family, but the rural setting feels entirely its own. Rute has closed for the 2026 season and plans to reopen in summer 2027.

Svedjan Bageri

Kåge, Sweden

A hay barn beside a working dairy is an unusually good place for lunch. At Svedjan Bageri, near Skellefteå in Västerbotten, the obvious order is a sourdough sandwich filled with cheese from neighbouring Svedjan Ost, followed by a freshly baked bun. The bakery’s setting gives the food a direct connection to the farm, with fields and grazing cattle outside and a simple café atmosphere inside. Farmers Pär and Johanna make cheese from their own cows’ milk. The bakery opens in summer only, with a self-service cheese shop operating alongside it.

Söderberg & Sara

Ystad, Sweden

Days in Ystad get sharper at Söderberg & Sara, the stone-oven bakery Per Söderberg and Tilde Möller run with proper grain discipline and zero pastry theatre. White Guide Café named it Sweden’s Bakery of the Year in 2018, which tracks: the bread is slow, the flour comes from small local producers and the coffee is taken seriously. We go for the cardamom buns first, then whatever looks too good to ignore. There are sandwiches, lunch dishes, pizza Wednesdays and a Malmö sibling by S:t Knut, but the Ystad original still has the strongest pull.

Krus Bageri

Undersåker, Sweden

In Undersåker, Krus brings serious baking to Fävikens Lanthandel, a food shop rooted in the Jämtland landscape. The bakery works with organic flour and older grain varieties including einkorn, emmer and Öland wheat, giving its sourdough loaves a character worth exploring. Pick up a loaf and something sweet, then browse the shop’s selection of local cheeses, charcuterie and pantry goods. Sharing the building with Undersåkers Charkuterifabrik makes the visit feel like a compact introduction to the region’s food producers. It is a particularly useful stop when travelling between Åre and Östersund.

Gamla Bageriet

Borrby, Sweden

A former village-shop pop-up has grown into one of Österlen’s more interesting everyday bakeries. Linnea and Jimmy began Gamla Bageriet in Örnahusen in 2020, then opened a larger production bakery in Borrby in 2024. All the baking now takes place here, using organic ingredients, long fermentation and flour partly milled in-house. Go for sourdough bread and whatever sweet buns are fresh that morning, or stay for a sandwich, salad or the soup of the week. The Borrby address even has a separate co-working room, making it a genuine local meeting place.

Bageri April

Västerås, Sweden

The open production space is part of the attraction at Bageri April in central Västerås: visitors can see the baking rather than just the finished display. Baker Kim Lund, named Sweden’s Baker of the Year in 2016, and chef Pär Martinsson opened the business in 2020 with a focus on carefully sourced ingredients and seasonal cooking. Sourdough bread and pastries share the counter with breakfast and savoury dishes, making it worth timing a visit around a meal. The combination of baking expertise and a chef’s approach gives April a more substantial offer than a conventional coffee stop.

Olof Viktors

Glemmingebro, Sweden

An Österlen institution since 2002, Olof Viktors occupies a converted farm outside Glemmingebro, where a wood-fired stone oven remains central to the baking. The counter is particularly good for stocking up: choose a sourdough loaf or crispbread, then add a bun or cake to enjoy in the café or courtyard. There is also a shop selling the bakery’s own products and other food gifts. Its rustic setting and generous range explain why the place has long been a fixture on regional road trips. Arrive early in busy summer periods for the widest choice.

Utgårds Hantverksbageri

Fjällbacka, Sweden

At Utgårds, a working farm outside Fjällbacka, the bread is sold close to where it is made. The small bakery works with organic heritage grains for sourdough loaves, buns and cakes; try the carrot cake if it is available. A self-service farm shop also stocks local produce and organic grass-fed beef from the farm. The bakery occasionally makes sourdough pizza, but the essential purchase is a loaf to take home. Fresh baking usually takes place on Fridays and Saturdays outside summer, while the farm shop is open more often.

Frö Bageri

Uppsala, Sweden

Local grain is the starting point at Frö Bageri, a small neighbourhood bakery that opened in Uppsala in October 2026. Co-founder and baker Maria Hansen trained through Eldrimner and works with cultural grains and other ingredients sourced from producers around Uppland, connecting the bread directly to the region’s farms and mills. The compact Kapellgärdet shop is geared towards everyday visits rather than lingering café culture, with sourdough loaves, buns and laminated pastries forming the core offer. Its strength is a clear local-food philosophy carried through a deliberately modest format.

Brödkultur 2.0

Helsingborg, Sweden

The old royal stables at Sofiero Gård, just north of Helsingborg, have found a second life as Brödkultur 2.0. The bakery revived a much-loved name from the city centre, keeping its focus on cold-fermented sourdough loaves baked in a stone oven and buns made with organic flour and real butter. Pick up a loaf or a cardamom bun, or stay for breakfast and a simple lunch in the converted stable. Homemade preserves and other pantry goods are available too. The historic setting makes this a particularly rewarding stop near Sofiero Palace.

Copain Ateljé & Bageri

Gothenburg, Sweden

Bread is only half the proposition at Copain Ateljé & Bageri, a Gothenburg neighbourhood bakery that opened in 2026 in a space where bread was already being made in the 1940s. The bakery works in small batches across sourdough loaves, croissants, tebirkes, Danish rye bread and pastries, drawing on both French and Danish traditions. Next door, the atelier broadens the idea into craft, interiors, books and useful objects chosen for material quality and workmanship. Together, the two rooms make Copain feel closer to a small cultural shopfront than a conventional bakery-café.

Gauffin Boulangerie & Pâtisserie

Kvarnsveden, Sweden

Some of Sweden’s most accomplished pastry-making happens in an unlikely setting: a small square in Kvarnsveden, outside Borlänge. Pastry chef Josefin Gauffin, a former head pastry chef at Stockholm’s Tössebageriet and a member of Sweden’s gold-winning culinary team, opened Gauffin Boulangerie & Pâtisserie with her husband Daniel in 2021. The display changes with the seasons, from inventive éclairs and fruit-filled pastries to a personal take on the classic Budapest cake. Sourdough bread, substantial lunch sandwiches and good espresso complete the offer. Come early: popular creations often sell out.

Byvägen 35

Sankt Olof, Sweden

A lush garden is part of the draw at Byvägen 35 in Sankt Olof, where tables sit among greenery in one of Österlen’s quieter villages. The café serves sourdough bread baked in a stone oven, buns and cakes from its own bakery in Hagestad, alongside substantial lunches. Order a cardamom bun with coffee or stay for a seasonal lunch; past menus have ranged from grilled focaccia to soups and vegetarian dishes. The relaxed garden setting makes it as much a place to linger as a stop for bread.
